History of & current state of Schneider-Bräu

Schneider-Bräu was founded in 1772. It was never the biggest of Weißenburg’s breweries but it was surely the most beloved. It sadly stopped brewing in 2015 when the family decided to concentrate their business interests elsewhere. Wettelsheimer beers were the replacement. In 2018, the family found a tenant to take over the operation of the pub with the agreement that the brewery would again solely supply it with their beer.  So, in autumn of that year, Zur Kanne once again offered Schneider-Bräu beer.

This already limited production took an unexpected turn by 2024. This found upstart Brauerei Pröls coexisting with Schneider-Bräu for a brief stint in the historical brewery. Sadly, this arrangement became untenable with Schneider no longer interested in brewing. Pröls took over the facility and is now brewing for both Zur Kanne and Schwarzer Bär, also in town. The pub remains very cozy and the food excellent.

January 2026 visit

On my recent stop, the pub exuded all of its past charms and the servers were friendly and efficient. I’d sampled some of the Pröls beers at the Schwarzer Bär the previous weekend. So, I was happy to find Zur Kanne had the Pröls Rauchbier on tap, one I’d not had. It was perhaps my favorite of their beers so far.

always cozy Zur Kanne

Though there were plenty of both traditional and more eclectic meals on the menu, I opted for the blackboard special. The Tiroler Schlutzkrapfen were little ravioli type pasta topped with Parmesan cheese, baby spinach, shredded potato, Creme Fraiche. This was all smothered in sage butter. An oversized bowl made the portion look small. It was anything but and was quite filling. They had some intriguing desserts as well but I opted for the Pröls Martini Bock. I’d had it the previous week and was happy to see it still on tap at Zur Kanne too.

Anecdotal visits to the old Scheider-Bräu

With a cozy atmosphere and great quality and value meals, it could have likely survived as a restaurant with another brewery’s beer. It did so with Wettelsheimer beer for a few years. Even before returning to small scale brewing, they continued to make the Festbier for the city’s Kirchweih once a year.

Schneider-Bräu beer & food

Their go-to beer was a marvelous true-to-style Märzen and it appears thankfully to be one of the beers that is available on tap now, too.  We had a marvelous pumpkin soup, Bratwurst and pork fillets over roasted potatoes and string beans that day.

When I went with my Dad, we both opted for a lovely Schnitzel that was also served over roasted potatoes. It was accompanied by the best string bean bundles wrapped in bacon I’ve ever had. My wife has been dreaming of having them ever since.

Dad’s not a real beer drinker but for a meal like this, even he’s happy at a brewery

Returning to Schneider-Bräu in 2019

We finally made our way to the reopened Zur Kanne in 2019. It looks exactly the same from the outside and if anything the interior is even nicer. It’s a homey traditional affair but it has nice modern flourishes which sets it apart from the run-of-the-mill Franconian brewpub. The menu was a bit smaller than the old one from memory but it’s a well-thought out one just the same, concentrating on Schnitzels, steaks and nudel-based dishes. There is also a large variety of homemade soups.

their rich Märzen was in great form & their tasty pumpkin soup was excellent

We’d done a nice hike up to the Wulzburg fortress so we were hungry. We rarely get a soup appetizer but the choice of five soups and the dropping temps made it hard to resist. We both got the pumpkin soup, which was rich and full of pumpkin and a slight spice. The presentation was a few notches above the typical Franconian brewpub too. Their Märzen was every bit as good as remembered and paired well with the soup.

a nicely done rump steak & their Helles

My wife got liver, which she raved about. I opted for the rump steak, which conveniently came in two sizes
. I took the smaller one as I was quite full from the rather large soup. The Helles was serviceable but after the Märzen, a bit lighter on flavor. In summer, it would be a good choice but if there in the cooler months, the Märzen is the way to go. Sadly, they no longer brew a Dunkles, much to my wife’s disappointment.

Current summation

So, Zur Kanne is back. While not exactly as it once was, perhaps more prepared to weather the tough for small brewpub landscape that has put many out of business. You’ll enjoy the food, atmosphere and the beer if you smartly make your way here.

Beers: Pröls Helles, Pröls Dunkel and rotating seasonal beers like Pröls Rauchbier and Pröls Martini Bock on tap. Bottled Pröls Weizen when available, otherwise Hofmühl along with that brewery’s non-alcohol offerings.

Anecdotally (and perhaps one day again if all goes well): Schneider-Bräu Märzen, Schneider-Bräu Helles, Schneider-Bräu Weizen all on tap.
