Who are Mike Mayr & Jan Müller?

Maischerei Mayr & Müller was founded in 2022 by two friends who had been home-brewing for many years. During COVID, with more time on their hands, they started brewing more beer and decided to try selling it. With a very small 75 L system, they began their journey in a property which was formerly a Schreinerei, or carpentry center. Maischen is the German name for the mash process of brewing. Mike Mayr and Jan Müller liked the sound of it combined with their names, creating their own word, Maischerei.

Zur Maischerei

Though initially just selling their beer to go, their events became popular. When Erk’s Stube (the restaurant at the front of the property) became available, they decided to give it a limited go. It’s still in its infancy so the name hasn’t been changed on the sign but it’s quite busy when they are open!

I contacted Mike Mayr prior to stopping by and he got right back to me. He graciously showed me the brewery prior to the Zur Maischerei opening. We then sat it the pub to try a couple of their tasty beers while he explained some of their history. Once opened, he occasionally checked in on me, but they were really busy, as you might expect with the limited opening days.

We started off with their flagship Salzkammer Gold, a hybrid Austrian/Franconian Märzen. Mike’s family originally came from the Salzkammer region of Austria. They generally do a hoppier than usual Rotbier but had a special Rotes Export called Schmarrbeudel on offer. As you might guess, a hybrid of an Export and Rotbier. I finished up with their Fastenbock called Fastenbrecher. Mike is a writer and his descriptions of the beers are more in the folklore fashion than mere beer descriptions. All were in the Craft beer direction but still quite traditional. I did not sample the fourth beer on tap, an XPA called Ray of Light.

The food

Zur Maisherei has a limited menu but it features a few vegetarian options. The Fish & Chips are reportedly excellent. I opted for a Schnitzel, which was obviously pounded and breaded onsite, and pan-fried. It came with homemade potato salad. Though it was ample, I couldn’t resist getting an order of Sylter Brot from Bäckerei Stark in Arnstein. Mike had explained it was legendary and they always invite them to their festivals. I can say right now, Mike knows his bread. It was excellent.

great food at Zur Maischerei

It was a great first visit to Maischerei Mayr & Müller, even worth coming all the way from Munich. Mike & Jan were warm and welcoming. Their passion shows in every thing they do. The servers did a great job, especially with how busy it was. I’d gladly return, hopefully for the Maibock. If going, please get in touch prior. It’s not a big place. Since it’s only open three days a month, I’m pretty sure it’s booked out. They try to accommodate everyone but there’s only so much space.

Maischerei Maibock

Though I unfortunately missed their Maibockanstich, I did make it back to sample their lovely example later in May 2026. Mike explained they were going for a more traditional representation and it sure it home for me. I also tried their Obatzda and it was once again super.

a Maibock worth the wait

Beers on tap: Salzkammer Gold plus three other rotating beers including Rotbier, Bernstein Weiße, Schmarrbeudel, Fastenbrecher, Maibock, SMaSH Solero, Ray of Light. They experiment a lot so this list obviously changes.
