The setting
Founded in 2020, Hopfenrebell was not only the first brewery to open in Bad Staffelstein in the modern era but also one of the first to specialize in Craft Beer in the region. Though there were a few others, Hopfenrebell truly embraced the modern brewpub theme which focuses on upscale food as well as hoppier beer styles. The interior is quite stylish but in a sturdy German way. The patio area is open and breezy but lacks trees, something you notice on a warm day. That said, on a pleasant sunny spring evening, everyone was sitting out outside.

The beer
Hopfenrebell perhaps unsurprisingly specializes in beers brewed with either American hops or those cloned on them. Even their two standard Franconian Lagers feature it if in a more subdued manner. I’d had both the Adam Riese Hell and Adam Riese Dunkel at the Bad Staffelstein Bierbrauerfest in 2024 and was surprised how good they were. So, that along with the concept of a date night dinner with my wife prompted this visit.

We started with one of each and with later parts of our meals had their Maibock and RatataZong NEIPA. The Maibock was in the Craft Beer vein but with plenty of malt backbone. I tend to shy away from any IPAs, after having drunk more than my share in the 90s and early 2000s but my wife still enjoys them so we opted for their New England version as the closer. Again, a bit surprised and might even admit, it was the best of the lot.

The food
I had already seen their menu online and it was a big factor in it being chosen for this special outing. We started off with Burrata Peppone and the Green Rebel Salat. Both were quite good but the portion size was a bit small on the former. We had not ordered a pizza as we weren’t sure how big the starters would be but decided we’d rather have another order of the Burrata and something it seemed everyone else was getting: Mini-Rösti mit Ziegenkäse und Birne. These were little potato pancakes with goat cheese and pears. They were super and glad we opted for them over the pizza.

Lovely starters
The service
Service was stellar with very friendly and efficient young people who actually seemed to be not only trained but enjoying what they were doing. It felt very much like we’d been transported from Franconia to a brewpub in the US.
Beers on tap: Adam Riese Hell, Adam Riese Dunkel, Herr Kules.
Seasonal beers on tap (generally three rotating): Maibock, Ratatazong NEIPA, Hellge.
Back to Bad Staffelstein or towns.
