Graser Wirtshaus history

Graser Wirtshaus is the latest incarnation of the Brüdermühle, a 15th century watermill that became a popular like-named hotel/restaurant in 1977. In need of a facelift, in stepped a pair of Bamberg’s most successful entrepreneurs in 2025. The Henrii group of eateries is running the restaurant and adding a lot of beery luster to the mix are new beers brewed at Schlenkerla. These beers are under the umbrella brand Konrad Graser, the first generation noted brewer of the current owning family. He was a brewer at the Michaelsberg, giving some credence to the claim of being part of the oldest brewing tradition in town. Their website gives more details but suffice it to say, one of the top restaurateurs and the most noted brewery combining forces has caused quite a stir.

Atmosphere

Graser Wirtshaus’ interior manages to maintain a traditional flair despite the modern flourishes a restaurant of this caliber is expected to exude. Our visit was the first week of opening and I noticed a lack of wall ornamentation and imagine there will be some tweaking in the next few months. A sign has to be coming even though they are doing well enough without one. Outside seating is quite nice with the best spots overlooking the iconic Rathaus. Servers were friendly and quick but the kitchen seemed overwhelmed at times, as might be expected.

The beers

The Konrad Graser beers were unveiled at the 2025 Sandkerwa in August to almost universal acclaim. That was no small feat considering the hype surrounding their arrival. I was quite taken aback at the seeming modern flair to what had been heralded as historical beers. There was no denying their being well-made and across the board, quite dry. I was happy to drink them in more relaxed fashion at the restaurant. While many are gravitating to the Graser Felsenkellerbier, I found the Fränkisches Pils more intriguing. I also was at odds with a second golden beer, the Helles Lagerbier. There will be a Braunbier after the Kellerbier runs out whereas I’d have preferred the Helles to be the summer seasonal.

two appetizers

The food

We started with a couple of their appetizers to mixed results. The trio of breads with three different toppings (cheese spread, cold roast pork & radish) was small. Admittedly, we only ordered the one-person portion but it would be a bit pricey for the size regardless. The smoked salmon with potato pancake was ample and delicious.

a lovely Schnitzel & under cooked apple rings

We shared a Schnitzel filled with mushrooms, mountain cheese and ham. It was ample and very tasty. The homemade potato salad was super. We noticed fries on other tables looked under cooked and the people next to us complained about theirs. We also split somewhat under cooked fried apple rings for dessert. Hopefully, they’ll sort this out soon.

Graser Wirtshaus is quite busy so making an easy online reservation is a good idea. We look forward to having another meal here once it settles into a groove.

Braunbier Anstich November 2025

Eagerly awaiting the unveiling of the new Graser Braunbier, I was elated to find it would be done a true gravity barrel Anstich. None other than Schlenkerla owner Matthias Turm did the honors of not only tapping the wooden barrel but also pouring the beers. Since I’d arrived an hour prior to the start to have lunch inside, I was first in line. It was a beer worth the wait.

a great true Anstich

Sandkerwa Graser Kräusen Festbier 2026

Graser Kräusen Festbier make its debut for the 2026 Sandkerwa. Reportedly a mix of a young Fraconian Pils and mature Kellerbier, it was a hit. Rinderbraten with Pfferlinge another winner, as well.
